Crack slaw or other good work food?

Hey all!

ive been trying to prep for work but making food ahead and putting it into individual containers.  This week I made a casserole recipe from Pinterest that's just plain gross, have had it twice and can't even do it again.

So thinking about making the crack slaw recipe.  It looks great, my only worry is how much protein per serving?  I'm still only able to do about 1/2 cup or a bit more of food.  Will take any other good work lunch ideas as well?

Hi,

Crack slaw is one of my favorites.  I make a bunch of chicken dishes that start with rotissary chicken, deboned and then I just add a sauce.  I make a pesto chicken with rotissary chicken and a jar of pesto sauce from trader joes.  Easy and I just love pesto!  Similarly, I make a chicken in spicey peanut sauce.  I have a  chicken and broccoli dish in a white sauce that is also really nice.  I think I've posted all these recipes on the recipe forum.  They are probably a page or two back now, but you  should be able to find them.

Good luck,

Carol

Crack slaw is a personal favorite for me too ! I use various proteins, and often add spiralized squash. I spoon out, weigh and measure my protein first, then add about 1/4 cup of veggies.

I am lazy, and have the ability to take in a week worth of meals at a time to work. I always keep yogurt and light cheese stocked. Leftovers is usually one or two meals. I also did the rotissiere option described above, expecially during the weight loss phase. Did a lot of protein shakes, keep soup stocked at work. I also a had a kick where I used Bento boxes, and really enjoyed that. There was something about packing the tiny compartments and pulling it out for lunch and have a variety of foods available. Made lunches far more interesting!

Early out, I loved chicken sausage. It was easy to take to work. I could do about a half and a couple bites of whatever veggies I had in the fridge. It was easy to portion out for the week and not think too hard in the am!

I take my leftovers from dinner, breakfast, etc. I will eat a lot of tuna salad, chicken salad, egg salad etc. Crustless quiche are great easy to make and heat up.
