I get up at 2-3am every morning and drink around 8 oz of fluids- does that count towards my 64 oz a day?

Of course!  Counting stuff doesn't just apply when it's normal waking hours.  It's whatever you take in during a 24 hr period.

How can you drink 8 oz all in one sitting?

Over time, as internal swelling subsides, you'll be able to drink more faster.  Some folks wake up from surgery able to drink fine.  Others, like me, couldn't drink much at all for the first few weeks.  Just keep sipping so you don't get dehydrated!

Sip, walk, rest, repeat!

I am going to say yes, the goal is 64 oz in a 24 hour period. Also, I am able to drink 16 oz while sitting down watching a thirty minute show with my daughter, because I would rather get it in than to get dehydrated and also if I drink too closely to the time I am supposed to eat, my stomach still feels full and it cuts into my protein. Hope this helps :)
