faux fried rice
I wish I could take pictures as pretty as Frisco does. But anyway, this is my faux beef fried rice, made with cauliflower instead of rice. My husband and daughter say it's better than "real" fried rice.
(cauliflower grated into "rice," egg, corn, peas, beef strips, green onions, garlic, ginger, soy sauce, sesame oil)

I found a video that shows how to make it. Use whatever you have on hand. I used sliced beef in mine tonight, but usually use ham and shrimp. I throw in whatever veggies I like. sometimes I add water chestnuts or baby corn. One thing I do that she doesn't have in the video is when she adds the oil at first, I put in garlic and ginger and saute that before I start adding my other ingredients. The "must haves" for this are garlic, ginger, egg, green onions, soy sauce and sesame oil. and of course the "rice." everything is else is whatever sounds good to you! (oh, I don't use nearly as much oil as she puts in. and I use olive oil)
