Just keep swimming...
Hi friends! I've been pretty quiet lately but just thought I'd write to say "I'm still here!". I'm still just chugging along. No weight loss but no significant gain either. I know that I can be better at a lot of things and I am trying my hardest.
I traveled a lot for work in the past three weeks and now that it has finally calmed down I'm throwing myself into losing weight! It's been really easy to be discouraged and I have let it get the best of me more than once but I'm not beating myself up. You might be reading and thinking oh same old story! But I know that there are people on here who either post or lurk that might be in the same boat as me. DON'T GIVE UP! I post to share my experience and let people know we're in it together. OH is the best support system I have besides therapy.
After traveling for weeks on end, I spent all day yesterday meal prepping and cooking. It felt so good because as you can imagine I've eaten out a lot lately with the traveling. I always tried to pick the best thing at each meal but sometimes crappy conference food + no car = not the best outcome.
I really want to try to get myself to the gym in the mornings to free up my evenings but it is hard when you're not a morning person! I know that if I can just get myself out of bed and to the gym, I can do it. I go in the evenings mostly but I don't get home until after 6pm, then gym, then go home to cook and eat and by that time it's like already 10-11PM. That routine is not working for me mentally or physically. I need to give myself some rest time in the evenings which is why I'm forcing myself to try the gym in the mornings at least twice a week. I'm constantly running all over the place and it just wears me out and then I spend all weekend lazing about lol.
Anywho, that's it for my update really. I made a really awesome quiche/frittata thing yesterday that I want to share. I call it "this stuff is going to rot if I don't cook it all RIGHT NOW" frittata haha. I had shredded brussel sprouts that I sauteed with some onion and baby bella mushrooms. Then I cooked up some center cut bacon and added that in. Cover with eggs and dollops of ricotta cheese here and there for added protein (and also because it was going to expire haha). I'm trying to be more economical! OH, I also started ordering my produce from Fresh Direct...so much better than my local stores! Anywhere here's some food porn:

I enjoyed this for breakfast this morning and I will use it for lunches or dinner during the week. Hubby is traveling this week and I don't want to cook every night so having a meal ready to go is always a good thing :)

I make an egg bake (frittata) every Sunday. I have it for lunch every day. I change it up each week by adding in different veggies and meats. I also make cook protein like chicken etc and have that waiting for me to grab for dinner. When I cook I make more than one meal. I have evenings where I have meetings making time tight to fit in a meal. Having things cooked allows me to assemble a meal pretty quickly. I even cook extra and freeze it in ziplock bags. Those can be easily defrosted and toss a dinner together in minutes. Just something that I find that works for me. You can do this! You have done it before!
Oh my gosh, Dani - this look SO yummy that my mouth is watering and it's a loooong time to lunch - lol!
I admire you for not throwing in the towel and constantly looking at where you can do things differently to tighten up your program. I've had to do the same thing recently and I guess it's what this entire journey is about. Learning as we go and being willing to make the necessary changes to stay on the right path. We may veer off sometimes but with our tool we can recognize that we're wandering and get ourselves back on track.

I love the never giving up attitude. The weight loss is slow to non-existent for me most of the time... but I've gotten so much better at not letting it get me down and I'm hoping you feel the same. I'm just going to do the best I can and work at it - even if it takes me another year. The reward is definitely worth the fight!!!
