Oh I will have to try this. I may wait until the garden is producing, homegrown veggies are so much yummier. I also have friends with chickens, best eggs ever. This will be great for a summer brunch.

ok, i made this last night.  didn't have ham so had turkey bacon on the side.   used 3 eggs for two servings. didn't hsve tomatoes and used frozen chopped spinach.   it  was great!  nice texture. not as pretty. diane

Hey Diane, that was my biggest concern when developing this one.

I thought for sure I was making hard hockey pucks, and the texture and mouth feel was always a first priority as I knew flavor wasn't going to be a problem.

I "might" have made one recently with a marinated mozzarella ball in the middle with salami, mushrooms and onions topped with pizza sauce on a bed of arugula!

yep, i will for sure make more of these. hockey puck would occur from over cooking but the bit on half and half helps. i used the real stuff. gonna get some sun dried tomatoes as i dont often have fresh ones.  and different cheeses. thanks for a new staple in our maintenance regime.    these have a  better texture than if baked.  d
