Made zucchini "noodles" w/ my new spiral slicer, steamed them w/ a little salt and pepper, and topped them w/ my tomato gravy.  So stinking fabulous!!!  No, it's not the same as pasta but it doesn't have to be.  It's delicious in it's own right and a healthy vehicle for my yummy sauce!  I highly, HIGHLY recommend making the very small investment in a spiral slicer.  It's THAT good!

I love zucchini noodles!  Good in a stir fry too with a spicy peanut sauce. I bought a julienne peeler off Amazon a while back for noodles. I like a mix of zucchini and summer squash!

Oh yes...and I have spicy peanut chicken already on my menu this week.  Serendipity!

thanks, I think it will, I  always made zucchini noodles with my  julienne peeler  but it died last week!  I usually  just sautéed them with olive oil and salt and add  a dash of parmesan cheese for more flavor. Love them.

I served a version of this the other night to a small group of normies as a starter in lieu of a salad.

It is wonderful.   I stir fry them in a little bit of olive oil and sesame oil with garlic and a variety of different spices.   This is my favorite thing to eat right now.   The zoodles absorb other flavors so well. I could eat them every day.
