I use a French cooking technique called Sous Vide where you shrink wrap the food and then cook it slowly in a water bath that cooks it without overheating so it retains its moisture and texture.  A few people were posting recently about a new sous vide techique with less equipment and expense, but I don't remember what it is called.

In any case, I really like the texture and taste of the salmon when I sous vide it.  I just season with salt and pepper and I'm a happy camper!

Wow I've been busy -- haven't been on here since last week.  This weekend was fun / busy / good / tiring :)  I pulled a muscle in my shoulder on Friday so ended up missing Hockey Friday & Saturday but am all mended now.  I was worried that I would be out for a while.  My roomate from college came to town last minute, so I got to hang out with her.  It is odd how time goes by and our best friends from certain periods in our life can float in and out of our lives.  Sad / odd, but it was nice to connect.  We lived together for 5 years and she just met my 9 year old son for the first time -- she did say she knew him when he was in my belly... 

Well food -- this weekend I kind of let myself eat what I wanted.  I think I needed it.  I was leaning towards restricting again too much with a stressfull work week.  My weight is stable, so I guess my choices were smart enough (with a cup cake and donut thrown in:)  

Today:

B - fit frappe & coffee

L - kung pao beef w/ a bit of rice

S - protein cake bites (oh my yum!  Opti Nutrition from amazon) + protein shake

D - either leftovers or stuffed mushrooms

S - cottage cheese & berries

E - crossfit + maybe yoga or weight lifting

Good morning, all! I have a busy day ahead and just hope it goes by fast.  I'm tired and ready to be back in my bed! :-) 


B: coffee, hard-boiled egg and 2 turkey sausage links

Snack: Oikos triple zero yogurt

L: Chicken sausage link (Trader Joe's) with steamed brussel sprouts

Snack: Babybel cheese 

D: shredded chicken taco salad**

**I love this recipe and it's so easy. I eat off of it all week.  I put 3 or 4 chicken breasts in the slow cooker and add a can of chicken broth and a packet of taco seasoning (or just season it with cumin, garlic, etc.). Let it cook for like 4 hours on high and it's done. I make chicken tacos for the family and I eat it on a salad or in a low carb tortilla or even just by itself with a little cheese and sour cream. YUM!!

Exercise: 3 mile run tonight

KittyKarin, have you ever tried using salsa instead of broth with the chicken breasts.  If I use 4 breasts, I pour 1 - 1.5 jars of salsa over them and mix in the taco seasoning.  If I'm cooking them on low in the crockpot, I shred the chicken after 5 hours, and add a can of black beans and can of corn for the last hour.  It is so Delish!!!!! 

One cup is 175 calories; 19g carbs; 2 g fat; 20g protein; 3g fiber & 8g sugar.   Seriously awesome meal!!!

Hey there!  I haven't myself but I have seen that as a variation to the recipe.  I think i'm gonna have to try that the next time I make it.

Busy 3 day weekend! Including working most of my "day off" yesterday. And tonight I need to finish my poster for the Women's March in Philly on saturday. I'm so thankful I am physically capable of participating in the march - there is NO way I could have done that last year!

 

Breakfast: 3 pizza egg bites (mini crustless quiche with mini-turkey pepperoni and cheese

Lunch - buffalo chicken with a dip made of plain nonfat greek yogurt and Penzey's FoxPoint seasoning - a little ranch like but so much better. I'm seriously addicted to shopping at Penzey's right now, especially after discovering their store in philly last saturday!

Dinner - ground turkey picadillo - adapted from the Skinnytaste website

Snack - 1/2oz of pork rinds and 1T of hummus

 

Exercise - walk after lunch break (a group of us figured out last week that one lap snaking our way around this very oddly shaped building is just under a mile. followed by resistance band work later tonight

L 1/2 can tuna salad, on top of slices of cucumber, and 1/4 cup of my Mema's (grandmas) home made lentil soup.

S if needed, cold cut roll up

D hamburger on top of cauliflower rice and other random veggies.

S if needed but ill try to avoid it, cold cuts.

Water on track! Adding back the amount of liquids to drink and then some, make me pee 12x during my day job. I count that as exercise LOL
