Low carb "grits"
I haven't tried it, but it sounds devine and comes from the book "Paleo comfort foods"
4 c cauliflower, riced
1 c almond meal
3 c chicken stock
salt and pepper to taste
Mix cauliflower, almond meal and chicken stock over medium heat in large sauce pan. Cover and reduce heat to medium/medium-low, simmering for 20 min, stirring every 5 min or so until liquid is absorbed. Season with salt and pepper.
