As a chef, what I do is take any recipie, and just substitute the sugar for splenda or whatever artificial sweetner you like (there is a conversion chart on the side of the box). One I used to make and bring with me to parties all the time is a crustless cheesecake. Its like a regular cheesecake recipie but instead of sugar you add whatever your favorite s/f jello recipie is to the cream cheese and omit the eggs. Put it in a pretty pie plate or square glass casserole dish and refrigerate. YUUUUMMMMMMM!!!!! You could also do the same with plain non-fat greek yogurt.
I found a recipe on pintrest for a protein cheesecake using plain Greek yogurt, skim milk, and SF cheesecake pudding. Make them individual servings by putting them in liners in a cupcake tin and freezing
You could add lime zest and juice to give you that key lime pie feel, maybe even lime flavored Greek yogurt.
You could change out the SF cheesecake pudding for SF banana pudding
Red velvet is a chocolate based cake with a lot of food coloring in it so you could try SF chocolate or fudge pudding mix.
Can't think of anything to help you out with the Carrot or Pound cake Sorry
