Delicious Crustless Quiche Recipe!

I just have to share - I made the MOST delicious crustless quiches!  I got the idea from the World According to Eggface blog (which is incredible and you should go read every single page lol).  But I had some leftover bacon, some onions and shallots, goat cheese, and egg beaters, so I whipped up 24 mini crustless quiches (I bought a tiny cupcake tray that has 24).

Ingredients:

1.25 cups egg beaters (equivalent of 5 eggs)

5 slices of bacon

.25 cups onions and shallots

3 oz of goat cheese

1 tbsp of olive oil

Salt and pepper and a little red hot chili pepper

Cook the shallots/onions, let them cool.  Rough chop the bacon.  Add all ingredients except cheese to a bowl.  Pour into greased (with Pam spray) cupcake cups.  Add a few crumbles of goat cheese to each.  Bake at 350 for 30 minutes.  Each one (1/24 of the recipe) has the following nutrition info:

27.5 calories

1.6 g of fat

.4 g carbs

2.5 g of protein

It's the perfect snack food or you can have a couple for a meal.  The World According to Eggface blog says that they freeze well in a Ziploc bag :)

These do sound yummy (BACON!!!) but I have a question: Is the bacon cooked before you add it to the mixture?

Oh, and did I mention...BACON!!!!

LOL!  Yes, I should have mentioned  - it was leftover and already cooked.  I have a weakness for bacon too.  I eat tons of lean protein and no carbs, but I do allow myself to incorporate bacon into my diet at times.  I hope you enjoy these as much as I do!

LOL, I was about to start a thread about quiche!  My DH made a fabulous ham & swiss quiche for dinner tonight.  I am on soft foods, so I put the diced ham through the Magic Bullet to make it shredded.  This was so good for my little tummy.

Crustless Ham & Swiss Quiche

4 oz. diced ham

1 cup shredded Swiss cheese

1 cup half & half

3/4 cup Egg Beaters

1/2 tsp onion powder

dash cayenne

1/4 tsp salt

1/4 tsp pepper

paprika

Preheat oven to 450.  Spray a glass pie plate with Pam.  Mix everything except the paprika and pour it into the glass pie pan. Sprinkle with paprika.  Bake at 450 for 20 minutes, then turn down the heat to 300 for 30 minutes.

1/12 of the quiche equals 60 calories, 4gm fat, 1gm carb, and 5gm protein.

 

HW: 229 ; SW: 208 (-21);  GW: 125

Wt. Loss:   M1: 189 -(19)  M2: 178 (-11)  M3: 172 (-5)  M4: 170 (-2)  M5: 166 (-4)

I was searching on here for some crust-less quiche recipes.  This sounds really good thanks!  And I just had to say...left over bacon???  LOL
