Anyone have an interesting way to cook carrots.  So many recipes have sugar in them.  Do you have a way you love to cook them?

I enjoy just roasting them with oil, salt, and pepper. Yum!

I can honestly say I have never added sugar to carrots! I find they taste better the less you cut them. So I just wash them and leave them whole. Then either boil them on the hob or, best ever, but you have to have a solid state cooker, I bring them to the boil, drain them, then put a tight lid on the (metal handled!) pan and let them steam in their own heat in the simmering oven for 30-45 minutes depending on the size.

Highest 290, Banded - 248   Lowest 139 (too thin!). Comfort zone 155-165.

Happily banded since May 2006.  Regain of 28lbs 2013-14.  ALL GONE!

But some has returned! Up to 175, argh! Off we go again,

What's a carrot?

6'3" tall, male.

Highest weight was 475. RNY on 08/21/12. Current weight: 198.

I've spiral used them into spaghetti noodles and tossed with butter and ginger

Ziplock has steamer bags I will use those with some Mrs. Dash seasoning and pepper.  I like that I can buy a bag of fresh carrots and steam what I want and add what I want to the bag before putting it in the microwave.

I'm not a big fan of cooked carrots in any form (I love them raw), but I make "carrot fries" for my kids, which are basically carrots cut into sticks, tossed with a little olive oil and soy sauce, and roasted in the oven. The love them - also great with parsnips.

I see that you are early on in your post op.  I am 4 weeks out and still need to keep things gentle on the tummy.  Basically I am still on really soft or pureed foods.  Having said that I boil carrots and a bit of potato together until they are really soft and puree them together with a bit of milk.  Getting enough calories in is still my challenge so I don't worry too much right now about the carbs.
