Eat between 500-700 cals. The 40-30-30 that I used was 40%protein, 30%carbs, 30%fat. But really, if you are eating so little, the main thing to focus on is getting the minimum of 60g protein.
Use fitday.com or myfitnesspal.com to track your food. Around 6 months out you should increase your cals to the 600-800 range. If you are very active, the NUT might suggest 1000 cals a day.
The rest of the rules that I have followed...
Eat protein first, then veggies/fruits if you have room, grains last.
A meal should never be more than a cup of food (although this is for those farther out...you are probably eating much less)
Separate your fluids and meals by 30 minutes each side
Don't eat more than every 2 hours.
Eat at least every 5 hours
This is just what I have done, I'm sure there are many variations. You are probably doing just fine as long as you are hitting your protein and water targets.

Sandy Surgery Jan.18,2012 with Dr. Timothy Jackson at TWH.
I aimed for 90g protein, 64 oz water. Nothing else mattered at the time.
