going to try edamame ......need suggestions please

I had my 9 month with the dietician on Tuesday and asked for other protein ideas.... She suggested edamame beans and so I picked some up at Costco...Now the tricky part...What to I do to them?!?! lol

I checked the Recipes site and didn't see anything..... Can someone kindly offer some ideas??

PS: the Ottawa clinic is now saying we only need to wait 30 minutes after a meal before we drink...Your thoughts???

I just cook them according to the package.  If they are still in the shell, just remove from the shell when you want to eat.  If already shelled then cook and eat.  They are good with a bit of sea salt on top of them.

I have made this recipe too and they are good.  Good to snack on like the roasted chick peas.

 

 

Crispy Roasted Edamame
Ingredients:
fresh or frozen edamame beans, shelled
olive oil
granulated garlic
salt
pepper
parmesan cheese, grated (optional)

Directions:

  1. Preheat the oven to 400F.
  2. Pat dry the edamame. (If using frozen edamame, thaw, rinse, drain and then pat dry.)
  3. Place the edamame into a bowl, drizzle with olive oil, then toss to coat.
  4. Sprinkle desired amount of granulated garlic, salt and pepper and if desired grated parmesan cheese. Toss to evenly coat the edamame.
  5. Spread the edamame beans evenly on a baking sheet, in a single layer.
  6. Bake in preheated 400F oven for 10 – 12 minutes, then remove from oven and stir around to ensure even cooking. Place back in the oven for 10 – 12 more minutes. Total amount of cooking time should be about 20 -24 minutes. (Keep an eye on the cooking process to prevent burning.)
  7. Remove from oven, you could eat warm or allow to cool for a nice crispy, crunchy snack! In my opinion these don’t store for too long, they started to be a bit more on the chewy side.
