Homemade SF Jello - No aspartame

I searched high and low for SF jello mixes that do not have aspartame. I couldn't find any, so I decided to make my own. Super easy and you can customize your flavors. If you find the flavor is too much, or not enough, you can reduce or add water to make it to your liking.

Recipe makes 2 batches of 4 cups of jello. These come out more like a jello jiggler (finger jello), which is always fun!

Ingredients:

1 packet sugar free Kool-aid mix (in the small packets)

12 individual packets of Stevia in the Raw (or whatever sweetener you desire)

48-50 oz of water

4 envelopes of Knox Gelatine

 

 - Mix water, Kool-aid and Stevia

 - Measure 3 cups into a saucepan. Bring to boil.

 - Measure 1 cup (cold) into a bowl (or for easier clean up, pour right into a 9x13 pan). Pour 4 envelopes of Knox Gelatine over cold juice. Let sit for a minute.

 - Pour boiling liquid over Gelatine and whis****il Gelatine is dissolved (about 2-3 minutes).

 - Pour into 9x13 pan and chill for at least 3 hours. Cut into squares.

Voila! You have a flavorful, aspartame free, SF jello! If you don't like Kool-aid, you can substitute any juice, crystal light flavored water, Powerade zero or Gatorade. I haven't tried those, but it would probably work just as well.

That is a good idea to use Kool-aid. This must make a lot of Jello. I did find jello with stevia at Whole Foods.

We don't have a Whole Foods around here yet. I think they will be building one about 30 miles from me, so when that opens I can't wait to go!

I usually get two 9x13 pans of jello from the batch of Kool-aid.
