foods in muffin molds

 what are some good foods to make in muffin molds to bake or make? 

Frittata or Quiche (crustless) or mini meatloaves are some I can think of.

Its basically a crustless quiche which is good for us.  Here's a recipe that's very yummy below that can be put in muffin tins.

So its like a little omlett in the shape of a muffin? I have never  tried quiche but do like omlettes =)

There are soo many things that can be put in muffin tins!

I've done egg dishes, mini-quiche, mini meatloafs, individual portions of casserole, tortilla-less enchiladas, one-dish tacos and even, *gasp* actual muffins. But muffins are pretty much a no-no, so I'd skip that.

hmmm never thought of making individual portions of casserole in a muffin tin, may have to try that. Anyone use the silicone ones? wondering if it is easier to get the stuff out

I make meatloaf in muffin pans all the time now, they come out to a perfect 3oz serving size and freeze great!
