What are you eating today?

I don't think we've had one of these threads for a while but I am eating yummy stuff today and decided it was time we had one.

For breakfast, I had an iced vanilla latte protein shake.

For a mid-morning snack, I had a chocolate chip oatmeal muffin (freshly baked).

For lunch, I had vegetarian chili with shredded cheddar cheese.

I think for an afternoon snack I am going to make roasted chickpeas, sprinkled with cinnamon and splenda.  If I end up being too lazy to do that, I'll just have some sharp cheddar cheese.

I will have more chili for dinner.

For a bedtime snack, I'll have some more roasted chickpeas if I make them.  Otherwise, I'll have to find something else.

I'm curious about your shrimp dip, too! That sounds good...is a recipe or store bought. Please share! : )

The dip is a basic cottage cheese, cream cheese, sour cream, finely minced celery, some mayo, horseradish sauce, Louisiana hot sauce, diced green onion, seasoned with a dill/garlic seasoning.  Dice the ****tail shrimp-1/2 lb.  Use all the low fat dairy that you want.  I don't measure but using a small container of a good cottage cheese I add 1/2 pkg of a low fat cream cheese, dollop of mayo, Tbsp Horseradish sauce, several dashes of hot sauce,  about three green onions (scallops), garlic clove.  Mix well and refrigerate for flavors to blend.  Serve on veggies or baked crackers or bagel chips.

You can add your favorite herb seasoning mix, I like a dill weed, chervil, garlic combo that I make to use in place of salt on practically everything.  It is great on eggs, in salad dressings, pasta, rice, tomatoes, potatoes, bread, .....

I also add cream cheese to yogurt with vanilla for a fruit dip.  Our B&B guests love this.  I sprinkle a crunchy granola on top. This is really so simple I'm embarrassed to mention it but everyone thinks it is so special.
