I love my instant pot

i do roasts, ribs, chicken, HB eggs, yogurt (first time this week), soups, steam veggies, make applesauce/puree, etc

my fav is for ribs- you put about 2 cups stock on bottom- season the ribs- roll them up and cook them. before i would only make for special occasion and now i make quite often

for thanksgiving i made cauliflower potatoes with goats cheese in them- cooked the cauli in about 6 min after coming to pressure - strained them then added the rest of the ingredients. super easy

 

i would recommend the facbook groups- just search on instant pot and join them

also there a paleo instant pot book coming out on amazon in Jan-

pintrest is also a great place to look!

I had absolutely no idea what an Instant Pot was before I came across this thread but after reading on it I definitely want one....especially because in my house I'm often the only one who wants to eat healthy meals.  I'm always struggling with cooking for just myself vs. the effort involved in preparing a healthy meal that is just for me.  I love the idea of being able to throw things in a pot and getting great results.   I have a couple of crockpots that I use, but this seems more versatile....

the best thing about the meats - is that you can prepare the meats for you and your family to eat then add separately the unhealthy side dishes they eat and just make yourself some veg to go with it.

OK I know this may seem ridiculous- but hard boiled eggs...the best because they peel easily after. I've tried a few different methods I found on the internet, and this one works the best for me...

As many eggs as you want on the rack, 1 cup water. Press 'steam' button, set for 6 minutes. When finished, do quick release  removes liner and rinse under cold water... I refrigerate in shell... and then use them as I need them.

One I've been enjoying lately is an adaptation from an old betty crocker chicken recipe, but have been using pork loin.

Buy 1 1/2 lb cryovac pork loins- unseasoned/ Cut in half and brown on saute. turn off saute. Add a sauce of 1/2 cup italian dressing, 1/2 cup SF maple syrup, and because this needs steam I add a little water too- 1/4c? original recipe called for smothering in sliced onions and apples...I have tried adding onions, not the apples. (original recipe was for oven) Press manual button and set for 20 minutes. When finished -quick release. Remove pork to platter, and put insta pot on saute for a few minutes to thicken sauce. Love...

I also did generic brand frozen turkey meatballs in there for a function in some chicken broth with teriyaki sauce...made bad meatballs taste amazingly better.....

I always rinse the lid and seal as soon as I remove it from the pot...Helps to prevent lingering odors on seal....

you can also soak the seal in dish liquid and vinegar to get smell out.

The Instant Pot is so versatile.  Features include Saute, Slow Cooker, Rice Cooker, Yogurt, etc.

I've made the Yogurt listed on the IP Group page...only need a gallon of 2% milk, 3 Tbsp. powdered milk, and 3 Tbsp. plain yogurt.  Makes thick and creamy Greek yogurt.  I then break it down into four containers... I leave one plain for cooking; add pumpkin to another; add s/f pistachio pudding to another; and s/f raspberry syrup to the last container. 

I've also make bone broth/soup; hardboiled eggs; whole chickens; ribs; spaghetti squash.  Besides the IP Group here, there's a Paleo IP Group on Facebook.  I've been using the IP more and more; it sat on my table for about a month before I took it out of the box.

i have the 6 in 1 but I really wish I'd bought the one that makes yogurt. It may mean a 2nd pot in the future!

So I do hard boiled eggs pretty much weekly, since Lance likes to have them around for snacks.  They're stupidly easy in the IP.  

I highly recommend checking out Nom Nom Paleo.  Paleo recipes are super WLS friendly in general, and NNP has a love affair with her IP, so she posts a number of recipes.  I made this one last night and it was delicious!  Cheater Pork Stew
