One week till surgery, getting back on track
It's basically a stew of browned cubed pork (I use pork tenderloin) with potatoes, tomatoes, green chile peppers and onions. When I say green chile I don't mean jalapenos, I mean GREEN CHILE. It's grown here in New Mexico and some surrounding areas but we're known for it here in New Mexico. Here's a picture of green chile stew (not mine, but looks about the same):
I make mine with a little less potato since I don't eat the potato anyway.
hi! Yeah I'm having it in El Paso because my insurance requires it to be at a Center of Excellence and we don't have one here. It's not too far away though, about a 4 hour drive. February will be here before you know it! Back in July it felt like it was a million years until my surgery and now here it is!!! You'll be surprised on how fast it can sneak up on you!
