Great Quick Chili - high fiber, high protein, fast and really good

Here is a recipe I threw together last night and it turned out to be really good. It was easy and fast and healthy.

1 package of ground turkey (1lb to 1.25lb)

1 Large Onion Diced

1 - 2 tbs of minced garlic (2-4 cloves)

1 tbs Olive Oil

1 Can of Black Beans rinsed

1 Can of Spicy Kidney Beans w/juice

1 Can of Rotel Tomatoes and Peppers Hot (You can use any spice level you like) 

1 Can of Roasted Diced Tomatoes

1 Can of Tomato Paste

2 Tbs of Chili Powder (or more to taste)

2 Tsp of Cumin (or more to taste)

2 Tsp of Cayenne Pepper (or more to taste)

Salt & Pepper to Taste 

Coat bottom of pot with olive oil, medium high heat.

Put the onion and garlic in the pan and saute until softened, add turkey (salt and pepper to taste) and brown until there is no pink.

Add in the rest of the ingredients and stir. Cook for about 15 minutes until all flavors are incorporated. Adjust spices to taste.

It sounds wonderful! We'll be home tomorrow and there's snow on the ground - chili is perfect.

Now, I don't suppose you have a white chicken chili recipe? We had a can of Hormel's white chicken chili here (we enjoy cooking for ourselves in our hotel room) and loved it, but it isn't available in Canada. (bah)

I made this spicy. If you don't like spicy use Mild Rotel and leave out the Cayenne pepper or use just a little bit. It has some health benefits so I wouldn't necessarily eliminate it.
