I posted this as a reply- but here's a recipe for pasta free lasagna

I posted in a respone to help with ricotta but I thought I'd post it by itself too.

 1 cup ricotta
1 egg
black pepper
3 tbs sphaghetti sauce
1 oz of mozzerella

Drain the ricotta

In a bowl whip the egg and ricotta together and mix in a little black pepper - couple of pinches is enough.   You could also add a little garlic or basil or both if want to to the riccota mixture.

Now get a oven safe dish (or microwave safe dish) a small bowl works well.  Place 1 tablespoon of sauce i bottom of bowl, pour ricotta mixture on top.  Then put two more tablespoons of the spag. sauce over top and sprinkle mozzerrella cheese over  it.

Bake at 350 degress untill cheese is golden brown.  (You can microwave as well but isn't as good as oven)

This will make two or three servings VSG size pasta free lasagna.  OH and a little crushed red pepper and garlic powder to flavor after cooking if you wish.

B****he egg will thicken and make the ricotta much firmer and give it a little more flavor.

 you could always use slices of zuchini in place of noodles too.
