This receipe has ham, egg, and cheese. Low in carbs and high in protein. I don't have time to copy the receipe tonight so I sent the web address that they give if you want to share the receipe with others.  So I am. 

Only 10 more days til New Orleans !!  I hope everyone that is going is getting excited like me!

 Just be careful with them early out, baked eggs tend to get a little dry and rubbery and they will be hard on a freshly sleeved stomach.

Here's a very similar recipe from LalaMonkey. I bookmarked it.
It gives some variations. Good way to use up leftover veggies, also.
I make these regularly and use them for lunch---just a short zap in the microwave to warm them (you don't really want to recook the egg)

I love these!  My husband and I have enjoyed them during our pre-op diet.  Just be careful with the non-stick spray.  If you use too much olive oil, even from a Misto, they are way too oily.  A little goes a long way!
