Teriyaki Chicken Breast over a bed of shreaded cabbage.....served with spinich soaked in Ponzu.

Drooling over food pics since I am currently on my pre op liquids. Will need to try this once I can eat again in a couple months, Looks yummy

 It all looks delicious.  I am still on mushies at the moment though. I have to say I love spinach. Soon, I think I will have to trek over to the asian market to find some Ponzu sauce to try that.

 I am just drooling.... are you able to find low sugar teriyaki sauce? Or is the amount small enough not to matter? Just curious...

Great question......

Teriyaki sauce normally has Sugar in it.

I'm guessing if you just marinated it than grill/baked it and didn't put any sauce over it you would only pick up trace amounts of sugar that actually penetrates the meat.

So my low carb version doesn't use any raw/granulated/brown sugar.

I just make it by taste....I don't have a recipe.

In a zip lock baggie I put the following:

-Soy Sauce
- grated ginger
- dash of sake or wine (totally optional)
- minced garlic
- ground sesame seeds
- finely cut scallion or onion
- Splenda
- small amount of Honey

So as you can see it's sweetened by Splenda.
The Honey has the sugar in it....but what the honey does is very important......just that little bit of honey gives it that nice "glaze" and "carmelization"

Also after removing the meat from the marinade, I pour the marinade into a sauce pan and heat it to a boil for about a second.....this insures you cook out any raw chicken juice and the marinade thickens up a little from the honey.

That looks like a great recipe and of course the Splenda (d'oh!) would make a huge difference. I'm gonna make up some chicken like this to take to work with me for a couple of lunches next week.... it looks yummy and I'm always on the hunt for new ways to improve a piece of chicken breast now that I'm allowed some real food.

Ponzu is Japanese....It's basically soy sauce with a citrus.... lemon or lime.

The brand I get is Kikkoman. It's a mainstream grocery store item next to the soy sauce.


Great on spinach among other things....I like it on meat or fish also.

I had a calamari salad at a restaurant with a ponzu dressing I'd like to re-create.
