Alright, who was it that suggested the frying cheese?

 I want to kiss you on the mouth! LOL I made myself some for lunch, lightly browned in some olive oil and garlic and it was outrageous. It crisped up to a perfect golden brown on the outside and was so melty and yummy on the inside. I split my two ounces with the baby and he loved it too (and he has texture issues, so this floored me LOL).

 It's a spanish cheese called Queso Frito (can be found in the cheese section at most stores, near the mozzerella). You fry it in a pan and it does not need breading or egg to coat it, it crisps up on the outside to a nice golden brown. I think next time I will just do it in my cast iron with no oil to see how it turns out. 

1 oz is 80 calories and 9 grams of protine. It is DENSE though, and I was only able to get down an oz before I felt like another bite might be an issue (hence, sharing with the baby LOL).

What Canadian store did you get that in? I haven't seen it anywhere, but intend to look.... my husband, who is from South America, says they grill provolone down there but it's apparently a different sort than what they sell up here as we tried it and it just dribbled down through the grill rack.... sigh...
