Gluten Free Power Protein Muffins

Gluten Free Power Protein Muffins

Just tried these this weekend and they are delicious.

Mix the following in microwave safe cup or small (tall rimmed bowl) clear if possible.

1 egg
1/4 c ground flax seed
1 tsp softened coconut butter or regular butter
cinnamon to taste
1/2 tsp vanilla
a splash of sugar free syrup (or honey or agave if you have the calories)

Whisk together, cooked on high power for 1 minute or until it puffs up and actually pulls from the bottom, easier to see if you use clear di**** kind of floats.

Dump onto plate and drizzle with some SF syrup. Should be texture of a zucchini bread muffin

10 Grams of Protein
Approximately 200 calories
5 grams of Fiber

Quite a tasty little high protein treat.

 You could probably cut the calories way down if you switched out the butter or cocnut oil , not to mention fat, with I can't believe its not butter or another low fat oil like Olive or Canola.

I am going to play around with the recipe.  Wondering if I could use applesauce instead of any oil and if I could mix in some oatmeal and cut back on the flax seed.  Worth tweaking.  So easy.  It kind of reminds me of french toast a bit too.  Thanks for the idea of lower fat.
