Egg Muffins----New Flavors
I eat an egg muffin daily (that's an egg in a muffin tin----no bread involved). But I just can't look at another Turkey Sausage Crumble---done for awhile.
Went searching for new flavors---checked out eggface (link below) for some flavor combo ideas and found these----tweaked a little----
1) Softened a few green onions, chopped up some turkey pastrami (deli counter--who knew?), some low fat swiss cheese---put it all in a bowl. Stirred in some some brown mustard (like 1T) and let "marinate" a little. Split it among 6 tins. Sprinkled with Caraway Seeds----they have calories! (again, who knew?) but I love the flavor of those little seeds. Added in the egg. I use Eggbeaters to save cals and fat. Cals--122 Protein--21 Carbs---3
2) Softened a few green onions and sliced mushrooms, chopped up some low sodium roast beef (deli), some LF cheddar---put in a bowl. Marinate with a little Lea&Perrin. Divide in 6 tins. Added eggbeaters. Cals--148 Protein--18 Carbs---2
Bake at 400 for 20-30 mins (depending on how you like your eggs. (Stats from MFP/recipes)
