ricotta bake and update

Hello all :))))

I am 14 days post op and 26 lbs down. I started Puree stage and so far so good. Today I made Shellys Ricotta bake, but I baked it a little different. I used a muffin pan and baked them in the little separate spaces so that all serving would be pre measured. Let me say, OMG so good!!! Its the best tasting thing I have had since before surgery!!!

Another thing I bought for this stage is refried beans with a little cheese and sour cream. (all melted down to puree perfection of course )

I am still having trouble getting all my protein and liquids in, but I'm getting a little better at it everyday.

Too all the pre op or newly sleeved, Hang in there, it gets better every single day!!! Literally!!!

Congrats on learning to work that sleeve!!! Awesome job! I appreciate posts like yours because I will be having my surgery on August 14th and I do have fears but my pros outweigh the cons so its moving forward for me! Reading posts like yours make it easier for me to know this is the right thing for me! Thank you for sharing!

I can't wait to taste that Ricotta bake everyone talks about!! I love Ricotta cheese. Hey Susieq...My surgery is on the 14 also. Soo excited!

I have been eating a similiar ricotta bake. I looked at eggace's recipe and adapted it. I just get a tiny bowl - about 1/4c size. I put in about 2 TBSP or so of ricotta cheese, microwave until its bubbly, then add about 1 tsp tomato sauce. Stir and enjoy!!! My 6 year old loves it too. He calls it his lasagna.
And yes...refried beans are yummy too!!!

I made it for supper last night and thought it was wonderful! It's plenty salty enough without adding extra though.

My husband wasn't too excited about it, but he hasn't just finished a month dominated by protein shakes. Lol

I've been pondering other options with basically the same ingredients and am planning to try it with pizza sauce instead of marinara and some sliced olives and turkey pepperoni added before the cheese - Pizza Ricotta Bake?

How funny!  Just moments ago I printed off Shelly's Ricotta Bake recipe to make for my dinner tonight.  I'm so happy to hear it's good.  I'm looking forward to trying it.
