Recipe of the Day - Skinnytaste Pork Chops with Shallots and Mushrooms

Here I am again with a new recipe!  I made this last night and even though I over cooked the pork chops by a *teeny* bit, my husband RAVED for hours about this meal and told me it's his new favorite meal that I make!  Say what!  I thought it was very good too but hubby was licking the plate clean.

You should know by now that I alter recipes quite often.  I love FLAVOR and SEASONINGS so instead of using JUST salt and pepper on my pork chops, I did salt, pepper, paprika, garlic powder, and onion powder.  I think it really made a difference in my sauce.  Additionally, I added a tsp lemon juice and about 1/4 cup of dry white wine to the sauce.  It was truly DELISH!

These were very tasty but hard to cook.  I had to turn the heat on HIGH to get them to brown and be easy to flip.  They are still pretty soft in the middle so they aren't exactly like potato pancakes but they were very tasty.

I'll be making this again for sure since hubby couldn't get enough of it!  BTW, I didn't eat that whole pork chop, maybe half, and not the whole cauliflower fritter either.  I did finish my arugula salad though!  Yum yum!
