great soft food recipe
I was at a New Year's party just as I was starting my soft food phase, and my very gracious hostess did a great job taking care of me gastronomically. I wanted to share this recipe with you as I've made it now a couple of times and it just is awesome. Better than canned chicken, and not hard at all on the tummy.
Chili-Lime chicken
you need:
2 chicken breasts
3 limes
1 tsp cayenne
1 clove of garlic per chicken breast, crushed
1/4 cup of chicken broth
low fat shredded cheese
How to cook:
Put the chicken breasts, cayenne, and the juice of 2 limes in a slow cooker. Add zest of one lime as well. Cook on as low temp as possible for 6 hours. Pull the chicken out and let cool slightly. Shred the chicken with two forks, and return it to the slow cooker with the juice of 1/2 the remaining lime and the chicken broth. cook uncovered in the slow cooker one more hour. Just before you serve, add 1 tsp of the low fat cheese per bowl. It'll be super soft but still have a "feel" to it. It's also juicy and has FLAVOR. It's also NOT spicy- the pepper just cuts the lime a bit.
I use a scale to get 3 oz out of this, and according to MyFitnessPal, per ounce this has 8 protein, 37 calories, 0.75 carb, and 2 fat. That's including the cheese!
I've considered swapping the cheese for the 0 fat Fage greek yogurt. I think it tastes alot like sour cream and will add a neat flavor too.
