I had surgery on Mon Dec 16 and was at work (desk job) the following Monday and flew from DC to LA 3 weeks and 6 days after surgery for a week long business trip. No problem at all. Each person has their own recovery process but that sounds like a really reasonable plan, barring some massive complications. I wouldn't plan to do major activities every single day since I'm six weeks post op now and exercising and full of energy but only eating less than 600 calories a day and haven't quite figured out how to balance my meal times so I don't get light headed. But in my humble experience I would say go for it!
A word of caution, if you haven't finished all of your pre-op testing yet something might be found that delays your op. For example, during my pre-op endoscopy an ulcer was found and my date had to be changed from mid February to sometime in March. So if I had made plans around that initial February date and projected healing times, I'd now be screwed.

I think you can manage, but your energy may be low. Also, you'll have to do a lot of planning around food at 6 to 8 weeks out.

I was still feeling pretty terrible at 6 weeks out. I had to have my disability extended out to 6 weeks before I returned to work. At 8 weeks the nausea was just starting to diminish. My brother and sister-in-law had VSGs and were back to work in less than two weeks, felt fine, no nausea. So, I suppose it depends on the person and what your plans are for vacation. Personally, I would have been miserable.
