Has anyone found success with almond or rice milk? Do they have less carbs than skim milk?

Oh yes.  I prefer Blue Diamond unsweetened vanilla almond milk.  1 cup (8 ounces) is 30 cals with 1 carb gram.  It's my way to go!!

I love unsweetened original almond milk. Way fewer carbs than regular milk. I find it fairly nutritionally neutral.

I've found and like reasonably well (let's face it, I've not found a milk substitute as good as milk) Good Karma's Flax Milk Protein+ (in the original unsweetened flavor). 50 calories per cup, 2g carbs and 5g protein (plant based protein - Pea protein). Has a bit more texture to it than the other substitutes which I find too watery.

If you drink a LOT of rice milk you have to be aware that rice is naturally high in arsenic and you can have too much, but if its just once a day its not a big deal.  We have moved away from rice milk and now drink almond milk exclusively.  I find that the Silk has a thicker, creamier mouth feel, but in our house of formerly skim milk drinkers its not our favorite.  We use the Blue Diamond original unsweetened for most things (in a bowl of cereal, making mashed potatoes, etc).  When I'm baking I use the unsweetened vanilla.

I use Almond milk (vanilla, unsweetned, 30 cals) and a flax milk with only 25 cals at times.   Mostly just for making lattes at home or in cereal.  Works great!

GwenMo turned me on to unsweetened vanilla flavored almond milk. I found an Aldi brand and a Meijer brand that are about a dollar cheaper than Silk and have the same nutritional value.
