Christmas Eve Low-ish Carb Pizza

Preheat toaster oven to 450F, place baking tray into oven upside down, you'll be cooking the pizza on it's bottom side.

I used a Damascus lo-carb flax "Rollup" as the crust.  Trader Joe's Arrabiata sauce, 2oz of finely shredded mozzarella, 2 oz of cooked italian sausage, and a little onion and red bell pepper.  

Into the pre-heated toaster oven until it looks like:

About 550 Calories, 16g Carb if you can eat the whole thing... which I doubt.  I'm doing about 1800c/day in maintenance, so this would be, calorically, an appropriate meal.  Earlier on, i would only be able to eat about half, and at 250-ish calories that would have been a pretty reasonable dinner.

Can't say I feel deprived when I see this (or Frisco's Americano earlier)

There is a race track in Italy called Mugello.....

Two of the turns are called Arrrabiata 1&2..... Just thought I'd put that out there.

Well, these days I tend to eat very simply.  I used to pride myself on cooking "fancy," but I think it's healthier (for me) to not have quite such an interest in food.  Luckily, a very nice gastropub opened next door to us - literally 50 feet from our apartment front door to the pub.  200 feet of glass wall facing the Manhattan skyline... but they make a nice steak frites - the steak is enough for 3-4 meals for me and the frites mainly go to my dogs... :)  Nice tender steak on top of some fresh greens with a touch of bleu cheese, a few pine nuts and a drizzle of balsamic... now you're talking!  I bet I have that 3 times a week now!

Are the turns called Arrabiata because you go into the turn "hot?" :)
