For the Faux Mac & cheese I took 2 heads of cauliflower (they were small)

Cut them up and boiled them in chicken broth.  When they were super super soft I used a slotted spoon and took them out and put in a strainer to drain.  Then I mashed them up good.

For the cheese sauce I melted 1/2 stick of butter, added flour to make a smooth paste, added 2 cups of milk and stirred until it came to a boil.  Took it off the heat and added 2 cups of extra sharp shredded cheese to melt.  Then combined the cauliflower and cheese sauce.  Put it in a baking dish for about 1/2 hour at 350. 

I only has 1 3oz serving of it.  I gave some to a friend who also had VSG and my daughter ate the rest.  She loved it and has asked I make it again.  The cheese sauce is calorie dense but could be altered to have less fat I'm sure...I'm just not ambitious enough to try!  LOL
