First try to not type in CAPS people will think your screaming.  Next this happens to almost everyone.  Your body will probably have this happen again when you move up to the next stage in food as well.  Do eat enough that you get your 60g or protein or whatever the doctor suggested you get. Not eating your protein will lead to other issues.  However being about 1-2 weeks ahead of you I understand your just establishing what those foods may be for you.  Don't stress keep doing what your plan says to and you'll start dropping again.

If you do a search for "3 week stall" you will find tons of posts about it.  It happens to many of us, me included.  Just stick to your doctor's plan and the weight will start dropping off again.

You will not lose weight this rapidly forever. In the first few weeks, you'll lose quite a bit, and afterwards it slows to 1 - 2lb per week, perhaps less as time goes on.

When eating "once or twice" per day, how much are you eating? You need to be meeting your protein goals for sure, and you may find yourself in trouble if not.

I'm nearing the end of week 3 and I'm going through the same thing. Hang in there because it will pass. I lost 19 lbs. my first week, 4 the second week then have come up 2 lbs. this week. I think our bodies are trying to figure out what's going on, so you need to give it time. I can certainly tell that things have changed and that I'm losing inches. Put away the scale, focus on getting in the proper amount of protein and your liquids and it will happen.
