No carb/low carb

Okay, 

   So my husband has been on this very low carb/no carb diet for the last few months. He cut out refined sugars, salt, any kind of breads, and limited his carb intake to no more than 30 g's daily.  Mainly he eats meats/eggs all day, and at least 2 cups of frozen organic veggies.  In the last five months, he has shedded almost 60lbs!

   I grew up on thai food, so eating Jasmine Rice is a staple in my diet. However, there is 45g of carbs in one cup of rice!!!  OMG!  I also cook a lot of pasta dishes, and the carbs on that too is out the roof. 

  I can good various satay dishes, but i'm in need of other ideas. I have this void that needs to be filled. How do you deal with the craving for bread, crackers, pasta, rice, and potatoes?
