Hi all,

I'm also trying to get back on track after a run-in with a pumpkin pie and a pecan pie on Thanksgiving.  I always gain a couple pounds of water when I eat carbs, but it was quite a shocker today when I stepped on the scale.  I'm higher than I've been since weight loss phase.

So here's to discipline and motivation.  I've got this!

breakfast - salmon

lunch - cheeseburger pie

dinner - pesto chicken and green veggie.

I'm going to cook chicken fried rice made with riced cauliflower today, and my delightful mediterranian chicken with apricots and kalamatta olives, and also the eggroll stuffing bowl.  These are all my favorites and should help keep me on track.

I hope you are all having a nice holiday weekend. I'm researching a Spanish immersion class in Spain for this spring. I'm considering spending 4 to 6 weeks in Seville, Spain studying at a language school and making weekend trips to other sites. Oh, the joy of being retired!
