Hi All,

I'm trying to get back on track after my birthday, and other joyful and stressful events. Yesterday I came as close to a binge as I've been since surgery, but I resisted.  I thought about some of the healthy low carb, low cal meals that I could enjoy instead, and I walked away from the chaos pie, and bought the ingredients to cook these instead.

I am making buffalo chicken spaghetti squash,  chicken salad over spiralized cucumber with a spicy peanut sauce (super yummy) and chicken with artichokes and sun-dried tomatoes.  Hoo-ray to healthy eating!

Breakfast - salmon

Lunch - finish off my taco casserole

Dinner - chicken salad with spicy peanut sauce

snack - chicken with sun-dried tomatoes and artichokes.

My thought for today is "to be in this world but not of it."  That works better than any desert.

Many blessings to all of you who are struggling now.

Carol

How do you make your peanut sauce?

I use a recipe from the Skinnytaste Fast and Slow cookbook.  Its called cold peanut-sesame chicken and spiralized cucumber noodle salad.  It is so yummy.

I won't post the recipe because its a new cookbook and she deserves her royalties.  But perhaps she has something similar on her webpage.  Skinnytaste.com.

best wishes,

Carol
